Meet the Team

We’re a small team with a big heart and an even bigger appetite for all things Mexican!

  • Executive Chef & Owner

    Sebastian is a self-taught chef and entrepreneur born and raised in Mexico City.

    His obsession with Mexican food led him to further pursue three specialization programs at the Mexican Gastronomy School (ESGAMEX), Mexico’s oldest and most respected culinary school dedicated to the research, promotion, and preservation of traditional Mexican gastronomy.

    His interest in food was shaped by his experience with Mexico City’s street food scene, as well as his deep passion for interior design, graphic design, branding, photography, and storytelling.

    This eclectic set of passions and interests led him to work with some of Singapore's most prominent figures in various fields and industries, such as museums, event planning, luxury brands, and of course, restaurants and bars.

  • Operations Assistant

    Kabir is an accountant by trade, a F&B veteran, a fantastic baker, and a full-time Singaporean foodie.

    Coming from a family of chefs and restauranteurs, you could say that he was born for this role.

    His deep love for coffee led him to start his career at a very young age as a barista, and his obsession with keeping everything running like a well-oiled and finely tuned machine has made him an indispensable member of the COACOA team.

    After being introduced to traditional Mexican cuisine, and having all his preconceived notions of what Mexican food is, there was no going back for him. He has fully become an honorary Mexican in the deepest sense of the word.

In its cuisine, Mexico has found the perfect record-keeping system.
