A mountainous and rugged landscape has protected the deep indigenous roots of Oaxaca state. Deemed for a long time as one of the cultural epicenters of Mexico, this state is home to many indigenous groups. The extensive cultural and ethnic milieu of Oaxaca is the source of ancient and endemic customs and languages, but most importantly a vast gastronomic catalog.

Its kitchens overflow with identity and with the wisdom of a well-protected past. One that is contemporaneous and world-renowned. Its gastronomic influence is so strong that it is often considered to be paradigmatic Mexican food.
